SEAFOOD SAUSAGE

It may sound a bit bizarre, but there's nothing fishy about this seafood sausage. Swimming in goodness, it's white fish, salmon and shrimp all rolled into one.
Ingredients

1/3 lb. white fish
1/3 lb. salmon
1/3 lb. shrimp
1/2 tsp. salt
1/2 tsp. fennel seeds
2 egg whites
1/3 tsp. white pepper
Juice from 1 lemon
Pinch of parsley
Pinch of paprika

Methods/steps
Combine all ingredients in food processor. Chop until coarse. Do not over-chop.Lay out one 14-inch long strip of plastic wrap. Spoon out sausage lengthwise on film. Roll into log 1 inch thick. Tie up log on ends and tie every 6 inches. Submerge sausage, still in the plastic wrap, in boiling water. Cook 1-5 minutes. Cool, unwrap and serve.
