MEXICAN OMELET

This tastes great for breakfast, lunch or dinner.

Ingredients
1 lb. Mexican Chorizo
2 hand fulls of tortilla chips, crushed
1 medium onion diced
1/2 medium bell pepper diced
1 cup cheese of choice
8 eggs

Directions
Cook chorizo in a pan and stir in diced peppers and onions. Cook everything until soft and then add crushed tortiila chips. Once everything is soft, add eggs and keep flipping over until well cooked. Enjoy!
