Chicken stock based Italian pasta soup.
Ingredients
1/4 lb Italian Sausage (casings removed)
1 cup sliced zucchini
1/2 cup green pepper, chopped
1 medium clove garlic minced
1/4 tsp oregano leaves, crushed
2 cans chicken broth
1 1/2 soup cans of water
1/2 cup of onion, chopped
1 cup tomatoes, cut up (chopped canned are fine too)
1 cup (8 oz.) frozen tortellini
2 TBSP chopped parsley
Directions
In large pan cook sausage, zucchini, green pepper, onion, garlic and oregano until well done; stir to separate meat. Add remaining ingredients; bring to a boil. Reduce heat, simmer 5 minutes or until done. Stir occasionally.
